Jaime Oliver says his recipe for vegan chicken couscous only takes 15 minutes, and I think he’s lying.

This vegan chicken couscous is a fantastic, quick, healthy option for lunch or dinner.

“Chaotic Food Vs Jaime Oliver” is where we take a recipe from Jamie Oliver’s 15 Minute Meals cookbook, and we see how long they actually take. We don’t practice these recipes, we read the recipe as we go for the first time on camera. Yes, it’s a little CHAOTIC, but that’s who we are!

We also convert them to a vegan recipe, as well to see if it’s even worth cooking in the first place.

Vegan Chicken Couscous – Jamie Oliver vs Chaotic Food

Recipe by Jamie Oliver, veganising by Moi:

Couscous:
300g of couscous
2 bell peppers
1 red chilli
4 spring onions
1/2 a bunch of dill
200g of frozen peas
1 small handful of olives
40g feta cheese (I used violife)

Chicken:
400g of chicken (I used Tesco’s own vegan chicken)
1 heaped tsp of oregano
1 tsp of all spice
1 lemon

Tzatziki:
1/2 a cucumber
250g yoghurt (I used Tesco’s own vegan yoghurt)
1/2 a lemon
1/2 a bunch of fresh dill

So, this turned out pretty good as a vegan alternative. Lots of flavor and texture and makes a really good quick lunch. The vegan chicken adds protein to your meal, so you know you’re getting a healthy balanced option. Put it in the fridge and take it work, as it’s great cold!
