What you are going to need

  • 1 packet of uncooked brown rice.
  • Nonstick spray.
  • ¼ cup of canola oil.
  • 1 lb. of mushrooms.
  • ½ teaspoon of salt.
  • ½ teaspoon of black pepper.
  • 1 diced onion.
  • 3 minced cloves of garlic.
  • 1 cup of walnut halves.
  • 1 can of lentils, drain and rinsed.
  • ½ cup of chopped fresh parsley.
  • ½ cup of bread crumbs.
  • ½ cup of quick oats.
  • 6 tablespoons of ground flax meal.
  • ½ cup of barbecue sauce.
  • ¼ cup of soy sauce.

What you are going to do

  1. To begin with, preheat the oven to 400°F. Cook the rice according to package instructions and let it cool. Cover a loaf pan with nonstick spray and with parchment paper.
  2. Meanwhile, heat the oil in a large saucepan over high heat. Add the mushrooms, salt and pepper. Sauté everything for about 10 minutes. It should start to get brownish. Add the onion and the garlic and cook for about 6 minutes. It needs to be tender and all the liquid should be absorbed. Let it cool.
  3. Then, pulse the walnuts in a food processor. They should get crumbly. Add the mushroom mixture, half of the rice, half of the lentils and the parsley. Purée everything until the ingredients come together into a paste-like mixture. Mix the walnut mixture with the rest of the rice, the lentils, the bread crumbs, the oats, the flax meal, ¼ cup of barbecue sauce and the soy sauce in a bowl.
  4. After that, scrape the mixture into the loaf pan. Bake it for about 30 minutes. It should be golden and set.
  5. Finally, brush the loaf with the rest of the barbecue and bake it for about 5 minutes. The barbecue sauce should start bubbling. Let it sit for 15 minutes. Lift the loaf from the pan using parchment paper.
