For making coconut milk, place a pot, rice, coconut milk, water, salt, and sugar. Cook until rice is done, and serve with chopped cilantro and toasted shredded coconut at the top.

Ingredients (4 servings):

  • 2 cups of chicken stock.
  • 1 cup of chopped parsley.
  • 1/2 cup of chopped cilantro.
  • 1 chopped poblano chili pepper.
  • 2 tablespoons of chopped onion.
  • 1 chopped clove garlic.
  • 2 tablespoons of extra virgin olive oil.
  • 1 cup of long-grain white rice.
  • Salt to taste.

Preparation:

  1. Place the parsley, cilantro, chiles, onion, garlic, and 1/2 cup of chicken stock in a food processor. Chop until they get a puree consistency. Set aside.
  2. In a saucepan, add olive oil and heat at medium temperature.
  3. Add rice and sauté for two minutes.
  4. Pour the puree into the saucepan, stir, and cook for five minutes.
  5. Incorporate the remaining chicken stock, and salt, and boil.
  6. Reduce heat and continue cooking for 20 minutes.
  7. Serve with extra cilantro or parsley at the top.
